It depends on which application you’re using. Some AppleScript-friendly applications (eg BBEdit, Mailsmith) let you attach scripts to menu items for pre- and post- processing.

A list of those applications that allow you to attach scripts to menu commands may well be ‘out there’ somewhere. I suspect cynics won’t be surprised at how few there are, though...
