If the prospect of learning Objective C or Java scares you, you could
try Python and PyObjC. But you'll need to learn a little Objective C
anyway to be able to read the docs.
There are other languages that have bindings to Cocoa and there's a
web page with a list of them somewhere, but I can't find it and I
haven't used any of the others. PyObjC is cool, though.
