Slightly more advanced Cocoa learning resources

Hi all,

I trying to write my first application in Cocoa which goes beyond the
single window framework that's present in most of the tutorials that
I've seen. In essence the app is a database which will have various
windows for different views / operations (So I'm not thinking
multi-document, more multi-mode).

Trouble is, I'm finding the conceptual leap to this more complex
structure of application quite difficult and I'm not wanting to pester
the list with lots of basic questions. So...

Does anybody have any suggestions for learning resources that go beyond
the single window, my first app, stage? I have the O'reilly "Learning
Cocoa with Objective-C", which is an okay book, but leaves me short for
what I want to do. All of the apple example code I've looked at tends
to demonstrate a single feature, in a single window. Great if you're
interested in that particular feature, but not what I need.

Where do I go to learn how to structure a more complex Cocoa App?

(Sort of questions I need answering would be:
Do I want to design all my different windows in one NIB or many?
How would I even go about using multiple NIB files?
How does the MVC model breakdown in things beyond a currency converter?)
