Are you running the app in the debugger? If you're building a 4-way universal binary, then the debugger will always launch the 32-bit version of the executable, even if you're using a 64-bit Mac.

If you want to build the app for 64-bit only, then you have to manually set the architectures to "ppc64 x86_64" instead of using a pre-set value. Also, Xcode 3.1's debugger doesn't work correctly with 64-bit executables. I haven't checked to see if they fixed this bug in 3.1.1, but they did work correctly in 3.0.
