You can use EPS and PDF in a color managed workflow, you just have to do a
lot more work when creating the EPS or PDF than you would have to do
normally. I end up using EPS (not so much PDF; I consider that more of a
final state than a process state--but that's just my opinion) when I don't
want the layout application to mess with anything (like QuarkXPress),
particularly when I know that the RIP can do its own color conversions. The
formats aren't very flexible in most color managed workflows, though (so I'm
agreeing with you).
I recommend TIFF when color managing through the work flow.
