The Working Space in Photoshop/InDesign/Illustrator is analogous to Default Source Profiles in QuarkXPress. Neither has anything to do with your display. The Working Space, and Default Source Profiles settings defined the profile to be used for a.) new documents and b.) untagged documents or placed files (in the case of a page layout application). Basically you can see the Working Space settings as a default.
