unfortunately there are a few things you (and Apple) don't have control over. Fortunately, at least for now, your file will probably not be converted.
"Standard" is where you tell the OS that you want host-side color conversion (as opposed to server/RIP/printer color conversion). There really should be a "none" here but there isn't.
In Epson drivers you also want to go into the "Color Management" tab - which is Epson's - and select no color management.
What will happen is that Photoshop will perform its conversion, then hand an untagged print job off to the OS which will (as far as I know) assign Generic RGB to it. (assign does not convert numbers though so all is cool) Then it hands it off to the printer driver which will then convert according to how you've set things up. (again, in the Epson driver you have turned conversion off so you should be OK).
The summary basically only tells you what the OS knows, which is that it has no control, or knowledge, of the driver and color conversion may occur. It also says that it is not asking for the printer to do the conversion - not that it would know about what happens in a networked or RIP-controlled printer.
What this means, in your case, is that we are lucky Epson gives us some control in their printer drivers. Conversion should not take place for you so things should work as expected.
The problem that you can likely see is there are several places where things could happen by the OS or a driver that we could not control nor would we be aware of.
As far as I am concerned, this is not an acceptable level of control or feedback from the printing system of a modern operating system. I love OS X but I hate this. There, I've had my say...
