I suspect it's simply because ACR is a tool for photographers, and
relatively few photographers think in Lab. (There have been quite a
few feature requests for a CMYK readout, but there's a distinct lack
of mobs clamoring for Lab.)
That and the fact that there are only so many hours in the day, and
adding Lab support would have meant cutting something else that would
likely be useful to a larger number of people.
I'm sure it could be done if enough people asked for it, though.
