With a RGB printer selected you will not be able choose "composite
leave unchanged"
I have always used the "Emulate Adobe InDesign 2.0 CMS Off" setting
when ever I printed either an RGB or CMYK target. And by the way
there is not difference in PS and ID printing to a CMYK device so
creating a CMYK device profile from a target in PS works just fine in
ID.
I would have to do some testing of Marco idea but it seems to me that
without CMS turned off in ID any CMYK target (should be untagged)
placed into ID would be color managed in some ways as you cannot set
the document to not assign a profile. With a CMYK printer selected in
this scenario in ID's print dialog under color management a profiles
clearly shows it is assigned to the document.
