Thanks for the suggestions Martin and Tim, but I'm still having
problems.
I managed to track down the log menu command in the installer. These
were the "interesting" bits:

Still seems quite vague to me.
I also tried removing all the non-apple kexts (firewalk and stuffit). I
think this may have solved some stability issues I was having, but its
not helped with the x11 install.
Of note. I can only mount the x11user.dmg with toast. It won't mount
using disk copy due to a checksum error? I'm using the downloadable
version from http://www.apple.com/macosx/features/x11/download/
The package on my install cd refuses to work with the installer as
well, giving a bill of materials error.

Some things to check:
- Make sure that you don't have any older Installer application lying
around that is executed instead of the Panther installer.
- See if you have any kernel-deforming applications like antivirus,
firewalls, haxies, or Stuffit Pro 8.0.1 installed. Run kextstat to see
if there is anything non-Apple there. Remove these.
