You can do this a few ways...
1) Write a script that uses xcodebuild (man xcodebuild) to build the
project and in that script do whatever else you want.
2) Use a shell script phase in a target to run whatever you want and
have that target depend on the target that builds the product you are
going to test. (multiple variations of this type of solution)
3) You can add custom executables to the xcode project and select those to run.
etc.
