I'm looking at installing a SCM. I noticed that xCode supports CVS, Perforce, and Subversion. Any feedback will be appreciated.

I just finished converting our 3+G CVS repository over to Subversion v1.4.6. (Note, I did not try to use any of the cvs2svn tools, as it was also a complete reorganization of the repository and rewrite of the build system.)

My experience with SVN so far has been excellent. SVN's branching and tagging is instantaneous, which is a big help for us. Xcode's integration seems to work very well. And there are nice GUI client's available as well.

I don't have personal experience with Perforce, but I hear very good things about it from people I trust. Given a choice between CVS and SVN, I'd choose SVN without hesitation.
