Not necessarily. It could also be from the fact that normally no debug information is generated for the release build in the first place.


However nm on each yields identical results .... does this mean the symbols are present in each?

Yes. I don't know why Xcode is not stripping your program here. You can always run "strip app" on the command line to manually strip it.
