Apart from waiting for us to produce better documentation ...

I'd suggest using UIElementInspector to see what roles we actually use. This is not foolproof because there are some places (esp in the Finder) where things may change - but the basic widgets are pretty stable.

And feel free to ask about specific roles on this list.
