In general, swiping left/right should just go to the next or previous element
unless you are in a special mode like text selection.
Where are you seeing it go by line/sentence/paragraph? It is possible that for
those cases, the elements just happen to align with those boundaries.

The rotor options are based on the nature of the focused element. For example,
elements that implement the UITextInput protocol will generally show the Lines
rotor.
