Yes, I can mount the Snap server via the Chooser and this is over a 10BaseT LAN. I have all other services turned off on the Snap at the moment: no web access (accept for admin) or NFS. Another strange twist to this is that the alias that shows up in the "servers" folder in the System Folder is in the form "servername*servername". I tried this naming scheme as well unsuccessfully.

Does your chooser recognize the server as an AppleShare volume?
AFAIK, you must have the Snap server configued to communicate by
AppleShare in order to mount it by afp://
Is this over a LAN or remote?
