As others have said, you want either the "expanded" or "completely expanded" property of folders. If this isn't part of a process, there are also key commands that will do the trick: command-right-arrow and command-left-arrow will expand and unexpand an item; adding option will expand or unexpand its entire contents. (Option-clicking on the triangle will do the same thing.)
