AFAIK, this is just a gap in Quark scripting. I need to address the same
issue and can think of three workarounds:
1) Build your "spreads" on a double-sized page, so that your script can save
the "page" as an EPS and what you get is really a page. This is not the
solution I prefer, btw, it's just one that would work in certain
circumstances.
2) If you have OneClick or QuicKeys or some other macro utility, use it to
open the "Save as EPS" dialog and set it to save the spread.
3) Check out the MadeToPrint XT from Callas Software. It allows you to set up
print job defintions, which are like Quark's print styles. Unlike print
styles, though, it's scriptable in a fundamental way. So my plan is to set up
a print style to save a spread as an EPS and use a AppleScript applet to run
the print job.
