Since you mention Entourage, it's much easier there: you can drag entire
folders of messages to the desktop where they become MBOX text files and can
be dragged back to Entourage at any time to resume life as a mail folder.
You can use them for searching the same way (or just drag them back to
Entourage without changing creator codes, and search there).
