Can anyone think of a way to control the capturing of video (from a
Quicktime compatible DV-Bridge) via AppleScript?

Two ways to do this that I know. Both require third party software ('lite' versions are free).

BTV: www.bensoftware.com
VideoScript: www.videoscript.com

I've used both (but its been a while since I've used BTV). Videoscript allows manipulation of the movies and images which I don't think you can do with BTV.
