Charts/Graphs - Best application for automation?

You'll probably want to take a look at:
Cricket Graph (as far as I can tell, the most capable graphing app)
Excel (simple graph from numbers; EPS results optional?)
Quark 5.0's internal graphing capabilities.
Illustrator's internal graphing capabilities.

As for converting EPS RGB to EPS CMYK, look at illustrator and photoshop --
both have the capability.
