I hear that, Ezra. I played with using speech to tell me about new mail, but
even with randomised message formats and voices the novelty wore off pretty
quickly. I still use it to announce a limited range of personal email, but
that just happens 2 or 3 times a week rather than 2 or 3 times an hour.

That being the case, I probably shouldn't be recommending 3rd party
scripting additions to you, but that's what you're going to need here -
especially if your list of messages is long enough to overrun the 255
character limit for standard AS dialogs. (Shame that Stickies isn't
scriptable - it would be ideal for this.)

You didn't say which version of Entourage (2001 or X), but if you're in OS X
there are fewer options available than in previous OSes. A solution that
works in both is the 24U Appearance OSAX [1], which is fabulously useful but
will set you back 30 bucks. It allows you to display a configurable floating
message window containing oodles of text, and would do just what you need -
but the price is a bit steep if you're just going to use it to display a
list of mail.

I use it when I need to see a list of running processes, which it displays
in a message window that updates and resizes itself automatically. Fab! And
it's really nice to be able to write a script for searching and replacing in
item names that lets me enter the search and replace strings in the same
dialog [2].
