Shouldn't applications, eg. Script Editor, record a preference in the .plist for the last directory used with this osax -- and others?

Good question. I checked my plists by mod date after the tests above and both editors had risen to the top of the list (reflecting the recent activity). Nothing else related to AppleScript surfaced.
