so choose print and then choose FAX
folder actions sounds the way to be notified about new faxes
while speaking about fax in OS X
does anybody knwo how to customize the fax cover page ?
and where is the log file ? (so you can prove
that you have sent the document as fax)

I believe you can get the log via CUPS:
http://127.0.0.1:631/
on anybody's machine.
