Already tried doing it in the Finder. I selected all the files in the folder (all 509 of them) and tried to Get Info. The Finder hung with a spinning beach ball. Had to force-relaunch it.

That part's easy...

You don't need Applescript for that. In the Finder, get info for any
one of the files. Toggle open the "Open with:" pane. Choose "Safari"
from the popup menu. Click the "Change All..." button, and OK the
resulting dialog.
