I'd bet that 99.9+% of the time, the received: From headers in spam email are accurate.

Although I'm definitely a slouch when it comes to Apple Script so I have one filter in Eudora that removes almost 99% of spam and is based on an observation about the "spam genre."

Very few non spam message *I* get have x-html in the body of the message and so I just filter on "x-html" and "a href="http"in the body and transfer those messages to a spam folder. I check through them once a day and delete all the spam, keeping those that I want.

Now this may be a peculiarity of the mail that I get but I offer the idea to those who may not have run across this yet.
