No. You can set nomail via the list server's web interface.

One way you should be able to do it is to set up a mail action or filter (or whatever it's called in Entourage) to send it only to those who are not in an address group called "Vacation" (or whatever you decide to call the group), and when it sends the vacation mail, to add the addressee to the group. Place this mail action so that it is evaluated after all the mail actions that filter mailing list messages into their folders; if those actions are configured properly, they will stop further evaluations, so the message won't ever reach the vacation mail filter.

Of course, after you return from vacation, you turn off the mail action and empty it of the addresses in it.

That is how I did it with Claris Emailer, and how I would do it with mail.app if they ever put in an action to add an addressee to a group (which would entail adding it to the address book too, which can't be done either).
