I hear good things about DropDMG:

It is shareware ($10), tons of features, can be run from the GUI,
command-line, and is fully AppleScriptable. It can segment, create
images from folders, convert image formats, etc. Take a look at it.
Another way is to segment the image yourself using the command-line
tool hdiutil, but it can be a pain to learn. If you want to go this
route you can learn more about hdiutil by entering "man hdiutil" from
Terminal.app.

I have StuffIt Deluxe. I could segment the disk image file with that
and burn the segments but I'd like to avoid the extra steps getting
the image onto CDs and off of them again.
