Best way is to dummy up a mock SOAP service (doesn't really need to be a SOAP service, just something to handle the post) that just dumps the post to a text file or database - PHP, perl, whatever server-side scripting language you're comfy with. Is there an AppleScript CGI solution for Apache on OSX?
