Apple has a web page that shows some resources for AppleScript:

Apple has a language guide which explains a lot. There is a web version:

The AppleScript Primer series of articles by Bill Briggs is a great way to learn AppleScript:

Here is another good primer for AppleScript:

Download the PDF on that web site, it explains a lot:

Finally, view the dictionaries of the scriptable applications. It's the dictionaries that really give you the syntax to control each application.
