Off-hand I don't know how you can do this via AppleScript, but DHCP uses a
broadcast-based discovery mechanism, so about the only way to get your
server to use a different DHCP server is to turn off the DHCP server on the
machine itself.

Then again, of course, running a server under DHCP is usually not
recommended. Most server-based apps like to have a static address.
