Phil,
Another possibility to try is to add a statement
to your existing script such as:
tell application "iTunes" to quit
Then, take your modified script and put it in the
iTunes 'Scripts' folder so that the script
appears in the iTunes Scripts menu. Instead of
quitting in the normal way, select the modified
script in the Scripts menu. When it runs, it
should do its copying thing, then quit iTunes.
You might also just be able to say 'tell me to
quit' since iTunes is running the script. I
haven't tested it.

p.s. For anyone reading this who does not know,
the iTunes Scripts folder has a path of
'~/Library/iTunes/Scripts'. If it doesn't exist,
just create it and place your scripts in there.
In iTunes, a Scripts menu will then appear and
you can select any of the scripts from it.

I think you need a helper to catch the quit event. I have a number of
items that run automatically when specified apps start or quit, and
iKey is my preferred solution. Check it out on VersionTracker (or
similar). Stick with version 1.x for now rather than the version 2
beta...
