Aside from the fact that it makes very little sense to want to change the
Subject of a message that you have _received_ [sure, lists and other things
toy with subjects all the time, so it's not a "never, never" case, but...],
it would only make sense that the subject could be changed on a Draft or
Outgoing message, from a scripting point of view.
Recalling from a couple of years ago, Paul B. had some scripts that did some
actions on received messages in Entourage. Whether his strategy relied
solely on the Entourage's capabilities (like showing messages as having been
Edited if they were incoming and altered locally) or not I don't know, but
the logic of his approach could probably be applied, up the point of Mail's
capabilities. Maybe he can / will share his approach.
In general, I find it quite odd that people want to change the subject of an
incoming mail. Again, I do get the possible desire to add [ ] pre-subjects
to the subject of a mailing list post (maybe to 'flag' subjects with key
words of interest), but in Entourage, anyway, there are a number of ways to
alert the reader to this kind of thing: actually flag it, change it's
category, etc.
Rules in Entourage seem able to do this, so maybe you could try a Mail rule
that acts on the incoming message, altering it as you desire (I don't know
about Mail's rule set...Entourage has a very extensive set of options.)
Similarly, if a post is coming from a web submitted form, maybe it would be
helpful to see the subject pre-fixed in such a way that it was
attention-getting. But, if it's the case where a person is the _recipient_
of a web submitted form, then it's also generally true to assume that that
person has some control over what is _sent_ by the form, and the subject can
(should) be altered there. At the minimum, if a person is receiving web form
submissions and they do not exactly control the technical aspects of
sending, they surely have some communication with those who do control those
factors.
Changing the Creation Date of a file or the Received Date or Sent Date or
Subject of a message all fall into the category of "Hmmm...what's up with
that?" in my book [given, of course, that there is always a case for
something and that's fine.]
