As far as I know, the only way of doing it in in straight AppleScript (ie. not Xcode) is by using 24U's Appearance OSAX - you can get it here: http://www.24usoftware.com/AppearanceOSAX

You do it like this...

display better dialog "Enter your password" fields {name:"Password", password field}
