I don't think that list includes plpot (plplot.org). There's tons of Perl stuff out there, but you're probably going to need another list rather than an AppleScript one.

Chartsmith could be the best from an AppleScripter's point of view. Illustrator probably lets you do the most tweaking once you've got the data in.
