Changing the creator type doesn't work and is not the same as changing the default application.
My own experience suggests that it generally does work, and does change a file's default application:
--
"Macintosh HD:Users:kai:Desktop:Picture 1.pdf"
{file creator file creator 1 |, default application default application 1 |} info for
"Finder" 's creator type "CARO"
{file creator file creator 2 |, default application default application 2 |} info for
{{| file creator 1 file creator 1 |, | default application 1 default application 1 |}, {| file creator 2 file creator 2 |, | default application 2 default application 2 |}}
--> {{| file creator 1 |:"prvw", | default application 1 |:alias "Macintosh HD:Applications:Preview.app:"}, {| file creator 2 |:"CARO", | default application 2 |:alias "Macintosh HD:Applications:Adobe Reader 6.0:Adobe Reader 6.0.app:"}}

The system still comes up and asks to select a default application.
There may be exceptions - depending on the specific application, system version, file type, filename extension, etc...
The default application is controlled by the system's "Launch Services."
Sorry - I was under the impression that you wanted to change the default application for an individual document:

tell app Finder
set default application of "blah blah blah document path" to "blah blah blah application path"
end tell
