Does anyone have any suggestions as far as text editors go?
I use Tex-Edit:

Of all the editors it is the most Applescriptable. It features full styling
including setting background color.

Two biggest limitations?

1) No Unicode (coming eventually, but no news when).

2) Lacks the "edit as root" feature of BBEdit.

Yeah, I use TexEdit when I want a really fast (at launching, and in general) editor with a decent Find/Replace interface and good scriptability... and I use TextWrangler when I want a good code editor. Ever since I discovered TextWrangler I can't see paying for BBEdit again - though I know that's not what they had in mind!
