This is a little off topic, but...
Actually, if your dates are out of whack the problem lies in your
FileMaker clients (FM client computers), not the server. When a record
in FileMaker is committed, it uses the local time of the machine (FM
client) that updated/inserted the record. Server simply serves the
database up to be used.
You may have one or more client machines on your network that don't
have the Date and Time Preference set to automatically check against
time.apple.com. Also, are there any PC's that use the FM Server? I've
seen Windows clocks drift way off over time...
