For an example of how this very thing has been done on Windows, take a look at http://www.fmdotnet.org. It is a piece of middleware that lets .Net programmers connect to FileMaker data in an way they're comfortable with.
I saw Wim Decorte, who wrote it, demonstrate this at our local FileMaker developer group last week, and it was very cool. He had a (Windows) desktop application that communicated with FileMaker Server Advanced via XML, without FileMaker Pro as a client. It made me want to be able to do the same on the Mac.
