Finder only attempts previews if it has a decent idea about what kind of
data is in the file. If you're not giving your files a file type of
"TEXT", then you at least need to give them a filename extension of
".txt" so that Finder knows what kind of preview would be appropriate.
(I just tried this and verified it - removing the filetype of "TEXT" and
the extension ".txt" from a text file in Columns view made Finder change
its preview from the first part of the text to a generic document icon.
Adding ".txt" back to the filename, then clicking on and off the icon,
restored the preview even without the file type.)
