You would have to use read and write commands to re-write the vcard after it
was created (or write your own from scratch). You'd really have to know what
you were doing too, if you expect other applications to do anything with the
fields: they would have to correspond to either standard protocol or
proprietary (to some other app) fields.  Address Book itself wouldn't know
what to do with them.
