Laine, you probably found something to use as a basis, but if not, check out
a script like "Remove Attachments with Log" [I can send if you wish][*],
because a script like that edits and re-stores the source of the message,
just as you need to do.
There are others, but this comes to mind ('cause I use it daily.)
[*] I don't know if this by Paul B., Allen W. or other originally. I've
edited it here and there for quite some time, as needed, for others tasks.
My strong belief is that it's a Paul B. script, so you might find it fresh
on his site.
