I try your script Bruce, and this is the result for both versions.

1st script:
osascript -e 'tell application "iTunes" to if player state is playing then "Now Playing: " & name of current track & " - " & artist of current track'


result:
Now Playing: Allegro In C Minor (HWV 408) - Andrew Manze,  Richard Egarr

Simpler script:

 osascript -e 'tell application "iTunes" to current track'

result:

file track id 4183

I can not generate a problem with either script. your problem must be elsewhere.
