But now I need an encrypted PDF.
How can I encrypt an PDF like Adobe with an AppleScript? ...and without Acrobat..

As I said a few days ago:
Encrypted PDFs are created in the Print dialog ...
The encrypted PDF you create can be opened in Preview and in Adobe Reader. (I tried both.)
However, if you want to script this, you may be stuck with UI scripting.

I wonder ... In order to avoid UI scripting, is gutenprint scriptable? and does it print to pdf? I don't know.
