After more experiments, a final note:

The command ...

	set current view of someWindow to someView

will check the "Always open in ..." box, PROVIDED the window is closed.
If the window is open, the box is not changed.

In Leopard, the window does not have to be open in order to get and change most window properties.
(Before Leopard, a folder window had to first be opened in order to read and write its properties.)
