Your choice is rsync 3.x. It preserves almost everything including creation & modification date. I used to syncing with a special patched version of rsync (rsyncx) but reading the blog on

http://www.n8gray.org/blog/2007/04/27/introducing-backup-bouncer/

tells me I can use the regular Version for Leopard.

There is also a free Program called Backuplist+ 6. which does not change the mentioned dates attribute.
