Well, ugh. I see that doesn't work :-(

So I'm wondering if these downloaded files have a resource fork? If so maybe you can try deleting it with:

do shell script "ditto --norsrc /path/to/input.m4v /path/to/output.m4v"

and then setting the creator (via Finder) to QuickTime Player.
