SL includes Rosetta - it just doesn't automatically install it.
 
You can manually install Rosetta as one of the optionals (a separate install on the SL disc).  OR, SL will ask if it can install Rosetta the first time an app needing it starts.  (For me that was on startup.)  If this happens, you will not need the SL disc.  (A very nice touch, Apple.)  I think Rosetta is pulled of the 'net, though, so you'll probably need to be connected.

Entourage 2004 runs in Rosetta on Intel, as I recall. Does Rosetta even work in Snow Leopard? I guess so, if yours does, but somehow I thought I had read otherwise. (I'm not on SL yet - just gathering information so far before taking the plunge.)
