Seconding Tim: if you double-click the .log file it will open in Console. Console updates the display when new text is appended.

Also, you can set Console to switch to front for a second each time it has something new to display.

Is there a way to watch the log file while the AppleScript is running?

I use Console (in /Applications/Utilities).
