Second for Matt's book - I found that it did a great job of explaining the crazy ways Applescript works (or doesn't).  Due to inconsistencies and other weirdness in the language, it is as important learning how to protect yourself from the language itself as it is to learn the grammar.  I've also found some great info in AppleScript 1-2-3 via Safari Books Online, but never read it all the way through - although Bill is a master, so I'm sure it's very good.

p.s. I bought about six Applescript books, and read and hated them all, before finding The definitive Guide.
